A Cozy Italian-Style Cooking Class With Chef Emma Frisch: Cauliflower Gnocchi

ree

There is something special about our monthly cooking classes inside The Blood Sugar Method. They are warm, unhurried, full of learning, and always leave everyone with a new recipe they feel proud to make again and again. This month’s class with celebrated chef and cookbook author Emma Frisch was no exception.

Emma joined us live from her upstate New York kitchen to teach a dish that has quickly become a community favorite: her crispy-on-the-outside, pillowy-on-the-inside Cauliflower Gnocchi. The class was lively, interactive, and filled with laughter, stories, and simple cooking techniques that even beginners could follow with confidence.

Below is a recap of the highlights, what made this class so special, and how you can try it yourself.

Why This Class Matters for Blood Sugar Health

At The Blood Sugar Method, we teach women how to balance their meals so they can support energy, metabolism, hormones, and stable glucose throughout the day.

This recipe is a perfect example of what we love to highlight:

Vegetables used in creative, satisfying ways

Simple ingredients

Family-friendly cooking

Adaptable blood sugar–friendly tweaks

Practical techniques you can use long after class ends

And most importantly, these events help you enjoy your food while still feeling great in your body.

Inside the Class: What We Cooked and What We Learned

ree

1. The Secret to Perfect Cauliflower Gnocchi

Emma walked members step-by-step through the full process:

  • How to steam cauliflower until perfectly soft

  • Why straining it well is the key to great texture

  • How to mix in a blend of almond flour + tapioca or lupin flour

  • How to adjust the dough for different cauliflower sizes

  • Why this recipe works for gluten-free or grain-free eaters

  • How to freeze homemade gnocchi for future meals

Members cooked along from their own kitchens, comparing textures, asking questions, and learning how to “feel” the dough the way Italian nonnas do—by touch, not perfection.

2. Rolling, Cutting, and Pan-Frying Like a Pro

Emma demonstrated how to:

  • Roll the dough into ropes

  • Cut gnocchi into even pieces

  • Use a fork to create classic ridges (totally optional!)

  • Pan-fry the gnocchi for crisp golden edges

  • Infuse the dish with fresh herbs like rosemary, thyme, or oregano

Emma’s tip that made everyone smile: this doesn’t need to look perfect to taste incredible.

3. Finishing Touches

We topped our gnocchi with:

  • Fresh lemon zest

  • Parmigiano Reggiano

  • Optional marinara or pesto

  • Optional roasted chicken or protein for blood sugar balance

Members shared photos, tips, and triumphs in real time. Many were eating their bowl by the end of class.

A Community Moment That Felt Like Magic

What makes these classes special isn’t just the food. It’s the people.

Women cooked from across the U.S., Canada, France, and beyond. Some joined from work, some from their kitchens with kids beside them, some quietly cooking along while their partners peeked over their shoulders.

We talked about:

  • Feeding families

  • Honoring midlife changes

  • Cooking with less stress

  • Whole-food ingredients

  • Everyday “kitchen wins”

  • How to pair this meal for optimal blood sugar balance

At the end of class, everyone turned on their cameras for a group photo — a moment of warmth and connection that reminded us why we created this membership in the first place.
